A delicious healthy meal from our Co-Founder and Nutrition Director, Louise Keats.
If you’ve made my Chickpea Ratatouille, this is a wonderful way to serve it. For breakfast, lunch or dinner, it’s such a delicious satisfying meal.
Gluten-Free, Nut-Free, Dairy-Free, Vegetarian
INGREDIENTS
- 1/3 batch chickpea ratatouille (see recipe here)
- 4 eggs
- Micro greens, to serve
METHOD
- Place ratatouille in a large frying pan over medium heat.
- Make 4 wells in the ratatouille and drop in the 4 eggs. Cover and cook on medium heat until eggs are just cooked through.
- Scatter over microgreens and serve.
